Pumpkin Chocolate Chip Muffins



Good morning to all from Tucker and I!


I had an interview yesterday, and I can't remember a time when I was more NERVOUS! I'm usually pretty calm and collected with these types of things, but yesterday was different. When I finished, I felt so mentally taxed that I literally couldn't do anything requiring me to think for the rest of the day. Shawn came home to me watching Glee and he goes, "Are you watching Glee?" Of course I'm watching Glee, I have zero brain power left, bro. Leave me alone!




I'm going to wait to talk more about it until I know more, but all-in-all, I feel like the interview went really well. I also really, REALLY want this job, so I'm hoping they liked me enough to give me a chance!


Anyways, how was everyone's weekend? Saturday morning, it was beautiful outside, so Shawn and I did a partner workout on our patio. It was a fun one:


Split the reps however:

40 cal bike

120 wallballs

40 burpees

100 v-ups

40 cal bike

80 kettlebell swings

40 burpees

60 power clean and jerks (75)

40 cal bike

40 power snatch

40 burpees

20 bear complexes

40 cal bike



I loved it. Shawn felt like he was going to barf. I think that makes for a good workout! After the workout, we did some exploring in the downtown Palm Desert area. I have a bunch of shops and restaurants on my list of things to do now, so I'm calling it a success. Then, on Sunday, we drove all the way up to Idyllwild to hike with Tucker in the cooler temps, only to find out that the San Bernardino forest was completely closed to all recreating due to the wildfires.




We woke up at 4am on a weekend for this hike. Lesson learned: check for forest closures before hiking. I guess if I'm being fair, it was getting very hazy from the smoke the further we climbed in elevation, so I get it. It wouldn't have been smart to hike in all that smoke anyways. We drove back to Palm Desert and found a local hike to do instead. Although it was much shorter than the hike we had planned to do, I think it was a good starting point for Tucker, especially in the heat, since we really haven't taken him out much since the move.



This guy probably would have been content with a walk around our neighborhood, to be honest. He has the BEST attitude.



After the hike, I was in a baking mood. I'm trying to manifest some fall weather out here, so I broke out the pumpkin for the first time this year. Also, I bought these incredible muffin cups at Target that had to be utilized immediately:



I've made pumpkin muffins in the past, but every time I bake them, I swear they get better. These muffins are grain-free, dairy-free, full of flavor, and super moist. If you are in the mood for something that tastes like fall, or if you just want a guiltless treat today, you should bake these right now!


Pumpkin Chocolate Chip Muffins

Ingredients:

1/2 cup pumpkin puree

1/4 cup coconut oil (melted)

1/3 cup maple syrup

3 eggs

1 1/2 teaspoons vanilla

1/2 cup coconut flour

1 teaspoon cinnamon

1 teaspoon pumpkin pie spice

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup chocolate chips (I used Enjoy Life brand)

Directions:

  1. Preheat oven to 350° and line a muffin pan with cups (or leave them unlined if you prefer) and spray them with cooking spray.

  2. Mix all dry ingredients (minus the chocolate chips) together in a small bowl.

  3. Mix all wet ingredients in a large bowl until well blended.

  4. Add the dry ingredients to the wet and mix until smooth.

  5. Fold in chocolate chips.

  6. Spread the batter equally across the 12 cups.

  7. Bake for 35 minutes or until a toothpick inserted into the middle of the muffins comes out clean.

  8. Eat one immediately. You won't regret it.



I chose to eat one immediately, because they just smelled so dang amazing, and then I put the rest in a large ziplock baggie and stuck them in the freezer so I could avoid eating the entire pan. These muffins still taste just as amazing after microwaving, and you get that melted chocolatey goodness as if they are fresh from the oven again. They make the perfect on-the-go snack or breakfast addition, as well as a delicious night-time treat when that sweet tooth starts to kick in.
