Sweet and Spicy Chicken Thighs

Super easy dinner recipe that we make all the time. Because you can prep, grill or bake them in under 30 minutes, they make for the perfect family meal during a busy week.

I have been making this recipe for years now and it never gets old to me. My husband is also a SUPER picky eater and he will down 4 of these suckers some nights (not recommended). In the directions, I walk you through the process of baking the thighs, but we also grill them sometimes and it comes out delicious either way. I go easy on the cayenne, because I am a wimp when it comes to spicy food, but if you like an extra kick you can add more.


I generally serve my thighs with some sort of rice. If you’re grain free, it goes just fine with a sweet potato or veggies only. I love some roasted broccoli or asparagus and a fresh salad with them as well.

Sweet and Spicy Chicken Thighs


Ingredients:


6-8 Chicken Thighs

Garlic Powder

Sea Salt

Paprika

Onion powder

Cayenne Pepper

1/4 cup honey

1 TBSP apple cider vinegar


Directions:


1. Set oven to broil.

2. Place chicken thighs on a cookie sheet (I typically pre-line mine with nonstick aluminum foil for easy clean-up).

3. Season each side with garlic, sea salt, paprika, and onion powder, then lightly sprinkle one side with cayenne pepper.

4. Broil thighs on one side for 8 minutes.

5. Flip thighs and bake on other side for 8 minutes.

6. While the thighs are baking, mix honey and apple cider vinegar in small bowl.

7. After thighs are cooked through, flip again and brush with honey mixture.

8. Broil for an additional 1-2 minutes, flip and repeat on the other side.

9. Remove from oven, allow to cool, and serve!
